Chocolate Galette Des Rois

Puff pastry: 2 rolls
Egg yolks: 2
Butter at room temperature: 125 g
Sugar: 125 g
Finely ground almonds: 110 g
Finely ground hazelnuts: 2 tablespoons
Corn starch: 1 tablespoon
Salt: A pinch
Eggs: 2
Almond extract: 2 drops (Optional)
Orange blossom water: 1 tablespoon
Melted GALAXY ® Silky Smooth Milk Chocolate: 80 g

1- In a bowl, whisk the butter until creamy.
2- In another bowl, mix the sugar, ground almonds, ground hazelnut, corn starch and salt.
3- Add the butter and mix well until you get a smooth mixture.
4- Add the almond extract, orange blossom water and the eggs, one after the other, mixing after every addition. Then, pour the melted GALAXY ® Silky Smooth Milk Chocolate and mix well until ingredients are well combined and mixture is creamy.
5- Cover the bowl and put it in the refrigerator for at least 1 hour.
6- Preheat the oven to 180 degrees C.
7- Place the first puff pastry roll in a round baking tin.
8- Put the cream mixture in the middle of the puff pastry and spread it over it without covering the edges.
9- Place the second roll over the first one and press on the edges to seal them well.
10- With a knife, create different designs on the upper dough and then brush it with the egg yolk.
11- Bake for 35 minutes until it well cooked and golden brown.
